Citrus baked feta
· 200g feta cheese slab
· 1 sliced and juice blood orange
· 1/2 fennel and fennel greens sliced
· 2 tbsp of raw natural honey
· 1 tbsp good quality olive oil
· black pepper
Preheat the oven to 180c.
Take an ovenproof dish and drizzle some olive oil on the base, then place the fennel, add feta cheese on top, season with pepper, add the sliced orange and drizzle with a little orange juice and the olive oil.
Bake until the cheese is soft and slightly melting for approximately 15 minutes.
Enjoy with grains like spelt or buckwheat and sliced cooked beetroots on the side.
